Well, it cost about 2 hours of effort, and devouring it took less than two minutes, but Wow! You can't beat a homemade cookie ice cream sandwich, especially when the cookies are still warm! You have to try it sometime. It was really hard not to make myself a second one. Mmmmmm, so very very good!
The cookies are chocolate chocolate chip and are from Mrs. Field's Best Ever Cookie Book. The center is a slice of Turkey Hill's fantastic Black Raspberry ice cream. Mrs. Field's book says you can freeze cookies, so I just made a couple of ice cream sandwiches for the freezer, we'll see how they hold up.
On Second Scoop: COOL!! You can freeze these for later! The only thing I would do differently next time would be to make the cookies a bit thinner so they are easier to eat after freezing. Overall, I LOVE the chocolate cookie and black raspberry combo!
Oh my gosh, those look sooooo yummy. My problem is that the cookies wouldn't last long enough to make ice cream sandwiches out of them.
